Avocado & Lime Cheesecake
Serves 10
Ingredients
4 soft avocados
250g packet plain sweet biscuits
100g butter, melted
½ cup shredded coconut, toasted
500g light cream cheese
600ml condensed milk
finely grated zest of 2 limes
juice of 4 limes
2tbs gelatine
½ cup cold water

Method
- Place biscuits into a food processor and process until finely crushed. Add melted butter and toasted coconut and process until ingredients are thoroughly mixed. Press the mixture into the base of a greased 22cm spring form pan and refrigerate.
- Place avocadoes, cream cheese, condensed milk and lime zest into a food processor and process until the mixture is smooth.
- Sprinkle gelatine over water and heat until the gelatine is dissolved. With the motor running, pour the gelatine into the avocado mixture and mix thoroughly.
- Pour avocado mixture evenly over the biscuit base. Refrigerate for at least 4 hours before serving. Decorate with fresh coconut if desired.
