Avocado & Lime Cheesecake

Serves 10

Ingredients

4 soft avocados
250g packet plain sweet biscuits
100g butter, melted
½ cup shredded coconut, toasted
500g light cream cheese
600ml condensed milk
finely grated zest of 2 limes
juice of 4 limes
2tbs gelatine
½ cup cold water

Method

  1. Place biscuits into a food processor and process until finely crushed. Add melted butter and toasted coconut and process until ingredients are thoroughly mixed. Press the mixture into the base of a greased 22cm spring form pan and refrigerate.
  2. Place avocadoes, cream cheese, condensed milk and lime zest into a food processor and process until the mixture is smooth.
  3. Sprinkle gelatine over water and heat until the gelatine is dissolved. With the motor running, pour the gelatine into the avocado mixture and mix thoroughly.
  4. Pour avocado mixture evenly over the biscuit base. Refrigerate for at least 4 hours before serving. Decorate with fresh coconut if desired.
