Banana Nut Loaf

Makes 1 large loaf

Ingredients

1 ½ cups plain flour
1tsp baking powder
1tsp cinnamon
½ tsp nutmeg
½ cup caster sugar
1 egg
1/3 cup sunflower oil
1tsp vanilla extract
4 large ripe bananas, mashed
½ cup chopped walnuts

Method

  1. Preheat oven to 180˚. Grease and line the base of a 900ml loaf pan.
  2. In a large bowl sift the flour, baking powder, cinnamon, nutmeg and sugar. In a spate bowl combine the egg oil and vanilla extract. Add to the dry ingredients together with the banana and walnuts and fold until just combined.
  3. Place mixture into the loaf pan and bake for 50 minutes or until lightly golden. Allow to cool before slicing.
