Banana Nut Loaf
Makes 1 large loaf
Ingredients
1 ½ cups plain flour
1tsp baking powder
1tsp cinnamon
½ tsp nutmeg
½ cup caster sugar
1 egg
1/3 cup sunflower oil
1tsp vanilla extract
4 large ripe bananas, mashed
½ cup chopped walnuts

Method
- Preheat oven to 180˚. Grease and line the base of a 900ml loaf pan.
- In a large bowl sift the flour, baking powder, cinnamon, nutmeg and sugar. In a spate bowl combine the egg oil and vanilla extract. Add to the dry ingredients together with the banana and walnuts and fold until just combined.
- Place mixture into the loaf pan and bake for 50 minutes or until lightly golden. Allow to cool before slicing.
