Grilled Chicken with Chilli
Banana Salsa
Serves 4
Ingredients
4 skinless chicken breast fillets, sliced
2 tsp sesame oil
3tbs low salt soy sauce
1tbs brown sugar
Salsa
3 bananas, chopped
2 red chillies, finely chopped
2tbs lime juice
1tbs chopped mint
2tbs coriander
2tbs brown sugar

Method
- Place chicken, sesame oil, soy sauce and sugar in a bowl, stir well and allow to marinate in the fridge for 30 minutes.
- Thread the chicken slices onto wet or oiled skewers and set aside.
- To make the salsa place banana, chilli, lime juice, mint, coriander and sugar in a bowl and toss gently to combine. Grill or BBQ skewers until tender, brushing frequently with the marinade. Serve chicken skewers on a bed of salsa with lime wedges to accompany.
