Grilled Chicken with Chilli
Banana Salsa

Serves 4

Ingredients

4 skinless chicken breast fillets, sliced
2 tsp sesame oil
3tbs low salt soy sauce
1tbs brown sugar
Salsa
3 bananas, chopped
2 red chillies, finely chopped
2tbs lime juice
1tbs chopped mint
2tbs coriander
2tbs brown sugar

Method

  1. Place chicken, sesame oil, soy sauce and sugar in a bowl, stir well and allow to marinate in the fridge for 30 minutes.
  2. Thread the chicken slices onto wet or oiled skewers and set aside.
  3. To make the salsa place banana, chilli, lime juice, mint, coriander and sugar in a bowl and toss gently to combine. Grill or BBQ skewers until tender, brushing frequently with the marinade. Serve chicken skewers on a bed of salsa with lime wedges to accompany.
