Mandarin Marmalade

Makes 6-7 150ml jars

Ingredients

16 (2kgs) mandarins
juice of 1 large lemon
6 cups water
7 cups sugar

Method

  1. Peel the rind from the mandarins and lemon. Remove from the rinds as much of the pith as possible and finely shred the rind.
  2. Chop the mandarin segments discarding the seeds. Also remove the seeds from the lemon.
  3. Place the rind, flesh, lemon juice and water in a large saucepan. Bring to boil, then reduce heat and simmer covered until the rind is transparent (about 45min)
  4. With a cup measure the fruit mixture, adding 1 cup of sugar for each cup of fruit mixture. Return sugar and fruit mixture back to the saucepan and stir over low heat until the sugar dissolves. Taste regularly adding more sugar or lemon juice of desired.
  5. Boil uncovered, stirring occasionally until mixture thickens and jell point is reached. Pour jam into hot sterilised jars, sealing jars when cool enough to handle.
