Grape & Almond Biscotti Parfait
Serves 4
Ingredients
500g green seedless grapes
¾ cups Greek yoghurt
100ml crème fraiche
¼ cup caster sugar
rind of 1 lemon, finely grated
8 pieces almond bread biscotti
1tbs brown sugar

Method
- Pick grapes from the stem, wash and place on a metal tray. Freeze for at least 1 hour.
- In a bowl combine the yoghurt, crème fraiche, sugar and lemon rind.
- Divide half the yoghurt mixture evenly between four 250ml glasses. Top with half the frozen grapes and almond biscotti. Repeat the layers. Sprinkle with brown sugar and serve immediately.
